Back in 2019, Hoda Kotb was all over the headlines for some incredibly happy news: she had adopted her second daughter and, to top it off, she and Joel Schiffman were officially engaged.
The couple, who had been dating for six years, first met at an event that Kotb would later tell Andy Cohen was the highlight of her night. The proposal came during a dreamy getaway in Mexico, with Schiffman popping the question in what Kotb described as the most perfect moment of her life.
